Sausage, Lentil and Roast Veg One-pot

Ingredients

1 pack Oddpods brown lentils

4 sausages

Aubergine- cut into rounds

Onion- cut into 8 pieces

Tomatoes- halved

Red pepper- cut into 1cm chunks

2 garlic cloves- peeled and grated

1 tsp smoked paprika

1 tsp red wine vinegar

Parsley- roughly chopped

Olive oil- 1 tbsp

 

Method

  • Preheat oven to 200° and start with a large sided baking tray
  • Put the sausages in a baking tray and cook for 15-20 minutes
  • Remove the tray and add the aubergine, onion, tomatoes and red peppers. Sprinkle over the paprika, drizzle over some olive oil and season with salt and pepper. Give the vegetables and sausages a good shake to coat them all
  • Return the tray to the oven for 25-30 minutes
  • 5 minutes before, remove the tray and pour in your Oddpods along with the garlic, return tray to the oven for the final 5 minutes
  • Once cooked stir through the parsley and serve up!
