Ingredients
1 pack Oddpods brown lentils
2 chicken breasts- diced
Tomatoes- chopped finely
Onion- diced
1 red chilli- deseeded
1 garlic clove- peeled
Ginger- small piece peeled and grated
1 tsp cumin
1 tsp ground coriander
1 tsp garam masala
½ tsp turmeric
Chicken stock cube
200g spinach
Method
- Start by blending the chilli, garlic and ginger until paste like
- Heat a drizzle of olive oil in a frying pan and add the chicken and onion, cooking for 8-10 minutes
- Add the paste and mix well with the chicken, cook for 1 minute stirring constantly
- Add the cumin, ground coriander, garam masala and turmeric, cook for a further minute, coating all the mixture
- Add your Oddpods brown lentils, chopped tomatoes along with 250 ml of water, crumble in the chicken stock cube
- Bring to the boil and then reduce the heat to lower and simmer for 15-20 minutes
- 5 minutes before the end start stirring the spinach in until it wilts
- Serve into bowls then enjoy!
