Butternut Squash and Chickpea Salad


1 Pack of ODDPODS Chickpeas

1 Butternut squash, peeled and diced into rough 2cm chunks

10 Sprigs of thyme

2tbsp Olive oil

100g Feta cheese

4tbsp Parsley, chopped

Salt and pepper



1. Preheat the oven to 200C.

2. Mix together the squash, thyme, olive oil and salt and pepper, then place in the oven and roast for 30-35 minutes, until tender and slightly caramelised around the edges. Remove from the oven and set aside until cool.

3. In a medium sized mixing bowl, mix together butternut squash, ODDPODS chickpeas, feta and parsley.

4. Serve with a drizzle of extra virgin olive oil.
