1 Pack of ODDPODS Chickpeas
1 Small onion, finely diced
1 Clove of garlic, finely chopped
1tsp smoked paprika
1 Handful fresh baby spinach
1 Can chopped tomatoes
1. In a saucepan, on a medium heat, sweat the chopped onions and garlic.
2. Once softened, add the smoked paprika and fry for 30 seconds. Add the tinned tomatoes and ODDPODS Chickpeas.
3. Simmer on a medium heat for 15 minutes. Season to taste with salt and pepper.
4. When ready to serve, mix through the baby spinach and serve.
