1 pack of ODDPODS Brown Lentils
50g Onion, finely chopped
200g Potatoes, skin on cut into 1cm dice
1 Leek, finely sliced into rings
1 Corn on the cob, charred, with the corn kernels sliced from the cob
800ml Vegetable stock
2 Spring onions, sliced into rings
Salt and pepper
1. In a saucepan, on a medium heat add the onions and leeks. Sweat until soft.
2. Once softened, add the vegetable stock, potato, sweet corn and ODDPODS brown lentils.
3. Bring to the boil, simmer for 10 minutes.
4. Season with salt and pepper to taste and serve. Garnish with spring onions.
