Smoked Harissa Cauliflower and Lentils

200g Oddpods Brown Lentils

1 small Cauliflower

1 Sweet Potato

1 Beetroot, cubed

1 tbsp Harissa Paste

3 tbsp olive oil

1/2 tsp Garlic granules

10 Sundried Tomatoes

Salt and Pepper

Feta cheese


Drizzle Balsamic Vinegar



1. Preheat the oven to 180 degrees. Combine the harissa paste, 1 tbsp olive oil, garlic granules and sprinkle of salt into a bowl.

2. Break up the cauliflower head into florets and place on a baking tray. Evenly coat with the harissa mix and place in the over for 30 mins.

3. Add pre-cooked sweet potato and the cubed beetroot onto a baking tray and drizzle with olive oil and a pinch of salt. Add to the oven and cook for the same amount of time as the cauliflower.

4. Warm up the lentils in the microwave or a pan and add 2 tbsp of olive oil and the sun dried tomatoes.

5. Take the veg out of the oven and serve up with rocket, the lentil mix and some crumbed feta cheese plus a drizzle of balsamic vinegar.
