Roasted Aubergine with Chickpeas

Ingredients

Oddpods Chickpeas

Aubergine

Greek Yoghurt

Garlic

Salt

Feta

Herbs

Chilli Oil

 

Method

1. Roast an aubergine and lay it on a bed of Greek yoghurt mixed with grated garlic, salt and lemon.

2. Top the whole lot with chickpeas, crumbled feta, freshly chopped herbs and a drizzle of chilli oil.

3. Serve with pitta bread or a mountain of chips...or both!
