Brown Lentil and Gungo Pea Dal

Ingredients
1 brown onion diced⁠⁠
Oddpods brown lentils⁠⁠
Oddpods gungo split peas⁠⁠
1 tbsp curry powder⁠⁠
1 tbsp garam masala⁠⁠
1 tsp turmeric⁠⁠
1 tsp ground coriander⁠⁠
2 tsp garlic powder⁠⁠
1 tbsp minced ginger⁠⁠
600ml veg stock (1 & half stock cubes)⁠⁠
70g coconut cream⁠⁠
Vegan naans⁠⁠
Yoghurt, coriander & crispy onions to serve⁠⁠

 

Method

1. Cook the onion for about 5 mins or until soft⁠⁠
2. Add all spices & minced ginger & cook for a few mins⁠⁠
3. Add veg stock & coconut cream⁠⁠
4. Simmer for around 10 mins then serve with yoghurt, coriander, crispy onions & naan⁠⁠. Mmmmmm enjoy!
