Ingredients
1 brown onion diced
Oddpods brown lentils
Oddpods gungo split peas
1 tbsp curry powder
1 tbsp garam masala
1 tsp turmeric
1 tsp ground coriander
2 tsp garlic powder
1 tbsp minced ginger
600ml veg stock (1 & half stock cubes)
70g coconut cream
Vegan naans
Yoghurt, coriander & crispy onions to serve
Method
1. Cook the onion for about 5 mins or until soft2. Add all spices & minced ginger & cook for a few mins
3. Add veg stock & coconut cream
4. Simmer for around 10 mins then serve with yoghurt, coriander, crispy onions & naan. Mmmmmm enjoy!
